I'm curious... What's the best way to clean/sanitize them?

Also, about 30 years ago, I worked as a meat cutter in a grocery store. Our tables were made from wood and we had an open air area, too, so it wasn't refrigerated like most are today. We cleaned the tables with soapy water every day. The tables were old and so used that there were dished out areas from the knife blades cutting into the wood. :)
