I've never heard of under saponification. You always want saponification complete. And my soaps test at 9-10

I had heard of some soap being just barely basic enough to saponify, making it a creamier texture.

I don’t have a desire for this, just curious about the process. I would think it would make the soap a bit greasy…

Oh, you're talking about super fat. That's when you put more oils in than are needed. This ensures that there is no lye that has not been saponified, and also adds a creaminess. I use a 5% superfat.
