Very much enjoyed applied cryptography by bruce schneier.

Started reading as a teen, so not too technical.

Computerphile and 3blue1brown are two youtube channels to check out

Highly recommend this book if you want something to supplement your video course. It gives a solid overview and has plenty of exercises in there:
