I did a really shit job explaining to my GF the reasons why Bitcoin can only ever have 21 million coins.

Anyone got a simple, succinct explanation for this?

The goal is to have it easy enough that even she could use it to explain the supply cap to people.

21 million is fixed because a vast majority of users agree - just like the word "million" in English.

Try changing the definition of the word million in the English language, it's an almost impossible task.
