Replying to Avatar a source familiar with the matter

Recently I amended my carnivore diet to include cheese, with the idea that unpasteurized cheese should be the richest animal source of vitamin K2 (and a decent way to get dairy fat with minimal milk sugars). I'm also eating egg yolks and a couple bites of raw liver for breakfast to get K2 & other nutrients.

I was looking for unpasteurized sheep & goat-milk cheese and happened to buy some Roqeufort, which I found delicious but very salty. I tried various other moldy cheeses, mostly unpastuerized cow's milk, and my conclusion is that Roquefort is clearly better.

Whenever I go carnivore again, I'm going for a caloric method, meaning non-caloric non-animal products are on the menu. I'll also exclude lactose. So, my menu will consist of all meats, eggs, and low-lactose milk products, as well as spices, seasonings, herbs, and distilled alcohols.
