What's the smoke point of something like tallow? I use butter when I can but avocado oil has a very high smoke point, which is nice for a cast iron frying pan.

With butter I can't get the pan as hot.

Depending on the tallow you buy or make it's relatively low. For the cast iron I highly recommend ghee, which is super easy to make

Certain store bought tallow has higher smoke points, but homemade I can't get it that high without smoke
