I processed 2 ducks today. I haven't done this in many years. I was very pleased that everything went smoothly and humanely.

Right now I've got them resting in the fridge.

I skinned them because they were old ducks and from what I've been told they would be very difficult to pluck.

I plan on brining, wrapping with bacon and smoking them low and slow.

This looks awesome. I used to eat a lot of duck back when I hunted, goose too. Nothing better than duck wrapped in bacon.
