I have a two year old starter that I've been feeding rye the whole time.
Woow fantastic! mine died after 9 months no idea why I left in in the fridge and when I came back (7 days) it was dead
Iβm no expert, but I have been using a starter since 2020.
In my experience, you need to feed it twice a week.

It happens! I recommend drying and freezing some of your discard to use as backup. You can rehydrate it, feed it a few times and you keep the lineage alive!

idk anything about starters but I'd mosdef be cutting it in half horizontally, spread a fair amount of cream cheese or gruyere, fresh chili bits, FGT (fried green tomatoes) and tons of fresh coriander on top, then cold cuts or grilled tenderloin tips, dill pickles and cucumber (julienned) on the side, dry red wine (not more than 13.5% alcohol) to flush it down with every bite ---> cross-eyed delicioso madness!!
Yes I agree, keep it simple. I love freshly baked still hot with just butter and salt. When it cool down I eat similar to you, with cold cuts and wine π€€ππ»
