Not crazy at all. I fully agree. Spent alot of time drinking wine in rural France. Never got a single hangover even after drinking opulent amounts. If i drink the crap we get in the supermarkets here in Scotland i get a hangover after a few glasses!

The French and Italians are very fortunate to have a culture of preserving and enjoying unadulturated food and drink. Unfortunately we dont have that here in the UK.

It's true, I used to work at biodynamic vineyard. Wild yeasts, no to low sulphur only fermented juice never managed to get a hangover with that stuff. I make cider in much the same way and the same applies.

crazy how visceral the difference is

For a drink to qualify as cider in the U.K it used to be that it only needed to contain 5% juice! Eventually all the tramp juice had to be reformulated to include the minimum of 35% to keep within the favourable tax band. Makes you wonder what a lot of the other content is besides water as there is no obligation to put the ingredients on the bottle!

Very true, its regulated because it gets the favourable tax rate. In reality it should have no tax rate so no need to have minimum juice content to meet that and its stifles creativity as the rules are quite rigid. Less shiftiness is the way.

I also found this to be true with local beer in the Black Forest. Need more info on this esp for uk.
