I know that reading the terms now I kind of don't want to use wallet of satoshi straight up. I have to switch up all my bitcoin wallets. Anything that touched wallets of the toshi I gotta switch now? I gotta make new wallets.

The only thing you can do for now for forward facing privacy and bitcoin/ln is a coinjoin.. or at least, make moves of similar structure (so not necessarily making use of Samourai/Joinmarket)
But you want to do more than just that for optimal privacy. It's good to remember that privacy exist on a scale + that we have to accept we can only do things to make it harder for the agencies or big tech companies to unravel your identity.
