How thick is the mulch looks like a good system for you.
Not much. I do a deep litter in the coop and spread about a yard of it over the whole thing a couple of months before planting. I’ll chip some mulch in a couple of weeks and put it down once the plants are a little bigger. The mulch isn’t suppressing the weeds though, it’s from having the chickens in there in the off season and rotating every other year and also not tilling up the dormant seeds.
