What would you recommend for a home server for a beginner? I see #umbrel and #start9 , also imagine raspberry pi can work.
What are all the use cases for a home server?

Umbrel is great for bitcoin related activity... But I wouldn't make a "home server" out of it!
What about hosting a website with low traffic?
You really shouldn't be hosting web sites from RPis. It's for playing with electronics and automation and prototyping, not for self-hosting. You shouldn't even be self-hosting internet facing websites in 2024. You can use github/gitlab pages for static sites.
Awesome, thank you for the github suggestion
Depends on the use case, but I use #umbrel running on a Raspberry Pi 4 to host #nextcloud (personal cloud for files), #immich (like google photos) and #jellyfin (for films and series). And I am quite happy with the relation between easiness to set up and performance.
Awesome. I would like to host my personal website on there. Would there be any concerns with speed or privacy/security? Also want to set up lightning channel/node (still bit confused on how to do so)
I wouldn't recommend to host on the same raspberry pi your lighning node and a website open to everyone. Umbrel is quite convinient for bitcoin/lightning node, nextcloud, immich and other apps provided by umbrel, so only you can access your data using Tailscale VPN. But for hosting a website there are esier ways than using umbrel. You can have a separate RPi with an apache server, just for your website. But maybe it is easier to use github pages, as some other people recommends.
