Use older eggs and steam them instead of boiling them. If you are buying them from a store you're hosed. My chickens stopped laying this winter and I had to buy store bought and due to the egg shortage the eggs were too new and I couldn't get them to peel at all. I tried every method that I knew of but finally gave up.
