You typically dox yourself if you order a dedicated hardware wallet onlinee. The company you order it from typically holds the record that can be leaked. You also expose yourself to supply chain attacks, a possibilty of somebody swapping it with malitiouse one or modifying it.
When traveling, you owning a dedicated harware wallet indicates already that you may own some Bitcoin. Not to mention it can be confiscated.
Traveling with a Raspberry Pi and a display says nothing about you owning some Bitcoin. You do not need to even travel with it. You most likely are able to source these parts at your destination.
