You could but most clients get you started with some relays already added so user doesn’t need to think about it in onboarding.
I don’t think anyone explains zaps.

Not that I'm aware. Would really benefit from having a quick walkthrough for onboarding. Doesn't need to cover everything, but point out where some features are.
