Peach, strawberry, and pink pineapple on honeyed mascarpone is a prime early summer dessert!

I’ve been curious about the pink pineapples for a while now. I’m glad I tried one; I love the color and something about the flavor is very slightly different than a regular pineapple, maybe slightly more “floral” if I had to name it, but not quite as richly pineappley as is possible, and otherwise not much different. Now I know that I’d personally rather have a perfectly ripe yellow pineapple that was organic (and still half as expensive). I’ll see what Sophia thinks when she wakes up, though 😊
