Should Non-KYC bitcoin be in a separate wallet or can I just make a non-kyc account within my wallet with kyc funds?

You have to flag your kyc bitcoin utxo's for better management. If the app allows for it.

But in this case, how can we know, how much wallets own more than a certain amount of sats?

Do we know which utxo belongs to which wallet.

Or how we know how many wales are out there?

We do know the addresses. But we dont know how many belong to one whale
