I do things a little differently than most: I never discard. Sacrilege I know but my bread still rises and makes people go “yummm” 😂

So whenever I know I’ll be using my starter I do try to feed it about 8-12 hours beforehand so it’ll be all happy bubbly. I also try to make sure it has been “awake” out of the fridge and fed for at least one day before this “priming” feeding.

My pancake recipe also uses some baking soda. I add that RIGHT before cooking because otherwise the floofness will subside.
