Why can I only ⚡️ people 1K sat? Is there a way to customize the amount? I'm using WoS, but I have others.
It depends on the receiver. Some have 1000 sats some allow any amount, some can attach a message

Not really. You can't stop someone from receiving a single sat payment.
Receiver needs to generate invoice. If they don't give you invoice for the amount you want you can't pay. Lightning cannot receive payment passively
