Even if your drive is not encrypted, most wallets would be encrypted anyway. For example wasabi wallet is encrypted. So the only way to steal your funds would be to read the unencrypted contents that live for a limited period of time in the RAM. This is a possibility, since once in a while some bugs are discovered where processes can access other processes memory. But the probability of this happening to you is low.
