Crust:

• 4 tbsp grass-fed butter

• 1/3 cup unflavored whey protein powder

• 1 tsp raw honey

Vanilla Cream:

• 1 cup grass-fed milk

• 2 pasture-raised egg yolks

• 1/4 cup + 1 tbsp unflavored whey protein powder

• 1 tbsp collagen powder

• 1 pinch sea salt

• 1 tsp organic vanilla powder

• 1 tbsp raw honey

• 2 tsp grass-fed butter

Natural Glaze:

• 2 tsp + 1/2 tsp water

• 1 tbsp raw honey

• 3/4 tsp grass-fed gelatin

• 1 tsp organic lemon juice

Method👇

Crust:

1. Melt butter over low heat.

2. Sift protein powder into butter, stir gently until golden crumbles form.

3. Remove from heat, mix in honey.

4. Press into parchment-lined mold (~0.4 cm thick).

5. Refrigerate until firm.

Vanilla Cream:

1. Warm milk + vanilla to 45°C.

2. Mix protein, collagen, salt, and yolks; whisk in warm milk.

3. Strain back into saucepan.

4. Cook low, stirring 8–9 min until thick.

5. Remove from heat, stir in honey and butter.

6. Cool, then refrigerate.

Glaze:

1. Bloom gelatin in 1 tbsp water (5 min).

2. Heat honey + water to 105°C.

3. Whisk in gelatin + lemon juice.

4. Strain and cool.

Assembly:

1. Fill crust with cold vanilla cream.

2. Top with fruit.

3. Brush with glaze.

4. Chill 30 min before serving.
