Definitely one of my favorite cuts now

You can use flank in a pinch, but with less fat you have to be careful not to overcook it.

Regardless, slicing across the grain allows it to just melt in your mouth. Dang it, now I want 🌮

ha. No way. I literally walked in from the butcher with a cut, marinated in chimichurri.
