I can eat 20 eggs a week. It’s not enough to sell. We got about 10 a day when we were selling, and it was about right. You need enough clients, and you need enough eggs to keep them happy, or it’s not worth it.

Oh, then maybe a couple more for when they molt or winter comes. Scramble and freeze the extras, or use limewater or wasserglas (sodium silicate), or salt cure the yolks.

Right now? Less probably 15 a week. For that I can thank two racoon attacks, a possum, and a groundhog that doesn’t eat eggs or chickens but is basically on the demolitions team for the bad guys. 😆
