Can’t tell you how many things I did not like eating at all when I married a chef. He truly opened my eyes that it wasn’t the food it was the preparation thereof, there’s very little that I won’t eat any longer

The preparation and presentation of any food is everything. I did grilled eggplant first time was amazing. The next 3 times it was mush. I have stopped trying to cook it.

Grilling with Parmesan cheese on top (after flip), works best for me.

Slice it, salt it, wait a little while, bake it or grill it with olive oil. You can do so much with the humble eggplant. 🍆

I also like grilling. Dries it out then I chop and add oil balsamic and herbs.
