My plan is to start by moving towards proton mail for the basics and using my Gmail addresses less until it's clear that I can kill them altogether. I'm not trying to pull the plug in one swift move by any stretch.

Good luck! This seems like the way.
I had thought about doing the same at one point but considered it to be too big of a hassle. One day. My current set up is Gmail for “official email” and Microsoft mail for random sign ups and spam.
Maybe what it should be is Proton for “official email” and Hide My Email aliases for random sign ups and spam.
The last is what I’m aiming for longer term.
