Did you use an additional yeast or just let the natural occurring yeast to develop? I’ve been getting good results with fruit meads just letting them naturally ferment.

Just the native yeasts from a small amount of fresh elderberries and the raw honey

That's a lot fancier than the smashed strawberries and sugar in a duct taped cooler I used in college lol

I think I used too much sugar. It was really sweet, like Kool aid sweet and the alcohol content was really high. The ladies loved it

That's about how the concord wine I made last year has turned out. It's basically boozy Welch's. My wife likes it, it's just OK for me.

That looks like there is a ton of fruit in there. Potential for a high octane mead

It's only about a half pint of steam extracted juice plus a small cluster of fresh elderberries. I'm planning to add more juice after the primary ferment
