Wouldn't gluconeogenesis take care of that, though?

You can survive without eating carbs but it is not optimum .
Why not? There are no essential carbs. And your body can produce sugar.
If carbs in the diet is not optimum why does milk from every single mammal contain sugar ?
Human milk contains about 72 g of sugar per litre .
Babies are growing at an accelerated rate. Lions also have milk as cubs.
Refined sugar is shit but your brain literally needs glucose to function and your muscles need glucose to store glycogen. If you can’t get access to sugar/carbs, your body will adapt and convert fat to sugar but that is less efficient. Athletes at the highest level can’t sustain a carnivore diet.
We tell kids not to eat sugar but human breast milk is like angelic ice cream. It’s so sweet.
