Communities on nostr kinda suck at the moment. You can do a few things like start a simplex chat group for keto people.

I use rabbit client and follow a few hashtags I am interested in, it's an easy way to interact with focused interests beyond the follow feed.

Yup. Following hashtags really does help, but, having dedicated communities will make nostr better, IMO.
