Its happened. Signal messenger recently implemented a captcha in order to send messages. Well today I can't send any new messages because I use a vpn.
This means I will need to reveal my ip to send messages in signal.
RIP Signal messenger. Totally useless for pribacy now.

Even if you did reveal your IP, that doesn't mean they're keeping it. Their software is open source and clearly shows once messages are successfully received by the server, the sending IP address records are dropped. So what's the problem here?
