The trick to making an omellette is start out like you're making scrambled eggs and then remove them from heat, scramble it up till you have like 30% wet to cooked egg and then use the wet as like a mortar and smooth it all out into the pan on medium low heat, at this point you can add your fillings and I like to rub extra butter around the edge of the omellette and coax it under the eggs with a spatula, then you can fold it up however and then flip it over so any running wet egg spills out and seals it up nice. Its a hassle but a well executed omellete makes you look like a food genius and once you get the hang of it, they are much more fun to eat.
