Running many servers doing different things is very hard

Preaching to the choir here.

Here is my best advice to you so that you can step up your self-hosting game.

Get a spare computer with modest specs. Throw a nice lean running linux distro onto it. Preferably with a GUI just for ease of use and so you can hook it up right to the TV for entertainment purposes too. I would suggest something like Lubuntu, Arch Linux with LXQT, or Trisquel with MATE.

Sign up for Tailscale.com to set up your own secure private mesh network. That way you can give private access to all of your family and friends without exposing it to the public internet and dealing with that system administration headache.

Throw on Jellyfin media server for the music and video streaming services.

Install Nextcloud onto it too to host your pictures, documents, collaborate on projects, even do video calls, live chats, and more too.

Running the Nextcloud and Jellyfin with Tailscale on one server won't be that resource heavy as long as there isn't a shit ton of users at any given time. A machine with at least 4-8+ cores, 16+ gb of ram, and a 1TB+ SSD should do the trick.

As for the self-hosting websites, security stuff, and training LLMs. Those will require their own dedicated computers and will vary depending on your needs. May be able to help out with advice on that too if you want to go more in depth on more specific requirements.

This will solve most of your self hosting problems gracefully in an hour, or two. Thank me later if you'd like. Preferably with a zap if you are feeling saucy and grateful for the tech advice if it all works out well for you too lol.
