I learned to make miso (fermented bean paste) a few years ago. Miso takes a few months to years to mature. I recently opened one that I made last year. Chickpea miso is easier to make than soy bean version so far.

Even the Japanese recipe can be good. I can just use Google translate for working out the bits I can't read....which is probably all of it 😁

I found some Japanese videos that may be useful too. The auto-translation was very good (almost scary:).
