Why? Because you can get superior disease tolerant trees that are clonal. No reason to waste time and years of bad stewardship waiting for questionable seed crossings to mature. Speaking mainly of fruit trees but applicable to many veggies as well.
Have you never heard of the stun method? Also this is how you grow nut trees from seed. Also also, growing from seed is more self sufficient
