I don't really understand how to use these I just add one or do I need to be in the WoT of members or something?
I wouldn't even know which category of relay options (on amethyst) to add one to lol.

You could add more than one if they had widely different WoT. But you'll get the best experience if you are included in the WoT. You can add them to Outbox and Inbox in Amethyst if you're in the WoT.
You can add any WoT relay run by someone who follows you or follows someone who follows you.
