Dumb question, but if I were to buy some btc over lightning from strike or Cashapp, and swap it to a Bitcoin address using Boltz.exchange, and assuming that bitcoin address isn't tied to my identity in any way, those sats would essentially be kyc-free, correct?

If you trust Boltz.exchange (that their solution is academically sound and that their implementation is correct), then yes.

Not in the US and didnt try it. But I dont think so. Your initial purchase creates a permanent record linking your identity to those specific bitcoin through KYC compliance1. Both Strike and CashApp require full KYC verification to use their services. Lightning still has records to be analyzed.

Yeah that's what I'm realizing. Using something like boltz, especially via VPN, means that my transactions after that can't be traced back to me. But there's still a record from Cashapp or strike that I bought those coins.

I'm still sticking with stacking through robosats anyway.
