RECIPE:

Flour 00 of soft wheat (thin) 500 g

Fresh beer yeast 25 g (or any yeast)

Salt up 15 g

sugar 10 g

Water 350 ml

Extravirgin olive oil 20g

- Mix first 100 ml water with yeast and sugar, mix and leave it 15min.

- Mix in a big "coup" flour and salt and oil and 250 ml of cold water, then gradually add the water with yeast and mix to obtain an homogeneous mix.

- Leave it for 2 hrs (up to 12/24hrs, but mix it a couple of times at least)

- Put it a pan olive oil and then put the dough on it, marking it like 2 cm thick, and leave it raise for 1 hr more.

- Add on top tomatoes, olives if you like, a bit of oregano and salt.

- Put in oven at +220°C for 20 mins approximately (Depends a lot on the oven)

Enjoy your focaccia putting whatever you want on top.. if you put ananas, GFY.
