Made a second turkey this week. First one was a touch dry so this time I overnight wet brined it with a salt and seasoning mix to plump it up before sous vide cooking for 24 hours. Dripped on a melted butter & seasoning mix then did a quick finish in a hot smoker for the added flavor and the classic crispy exterior.

It had great flavor. I guess I got lucky but I the rosemary rub imbibed the flavor alongside the smoke while retaining the moisture πŸ’¨πŸŒΏπŸ¦ƒ
