Cut them to flatten the stems. Steam for 5mins just to get the stem soft, then through them in a pan for 1 minute to brown only the stem while buds remain bright green.

I never cook the stems, just peel and slice into sticks and serve them as a table-vegetable in a cup of water or sliced and added to a salad. Very similar to the taste and texture of a kohlrabi

No. I will blanch it quick then olive oil, salt, pepper, then quick grill.

What is reverse-sear? I usually roast my broccoli with a little olive oil, salt, pepper, garlic etc..

yep, but instead of sous vide you can use the oven to slow cook it first.
