Stop using F-droid. It's as centralized and as controlling as the PlayStore. They are just different overlords.
Use Obtainium instead.

They don't. At least not yet. Which is good. There is no central database to control.
"Good thing..." Yes and no. Thus my response/question. The OP had mentioned they "searched" F-Droid.... and only found one app. Without discovery a person that doesn't know the app names for the functionality they seek may never find the available options.
I agree installs should be done via obtainium but something is needed for discovery. I've run across this issue myself when searching for various bitcoin and crypto wallets. Web search alone isn't always enough.

There's value in having centralized package curation amd oversight. The problem is when as single package curator has monopoly over the whole ecosystem.
Asking regular users to install their random apps directly from developers is going too far.
Also, all this reliance on github action builds gives Microsof more and more power.
I don't disagree. But fdroid is not the structure we should use if we trully care about decentralization.
What is the alternative?
It would be nice if everyone had a list of their preferred apps we could all see. Maybe Obtainium will develop that someday. Get the list from somebody you trust, no just one entity.
It's not just opinionated lists, fdroid also makes their own builds and lead the effort in attesting build reproducibility (together with debian and archlinux).

And they are good in that. But, like you said, it's centralized. I am not debating they provide a good service to the community. But it is a platform that drives centralization on them. I wish they simply didn't have a master catalog of anything. Users would be forced to find other lists of apps to trust.

Yep, their defense of open source is awesome. But they do that by attaching the catalog to themselves, in a personal basis.
If you prioritize open source, they are your people. You want decentralization, they are on the opposing corner. Open source tech is not necessarily decentralizing tech.
And I smell pleasure in power from miles away.
Tbh their client is not even the best one. Droidify is much cleaner and actually defaults to the fdroid repo + izzyondroid.
I get your point but at the same time, if it's fully FOSS it's hard to stay centralized as there's always pressure for competing forks or clones (as was the case with the app client and repo).
Sorry, but I don't think f-droid is centralized. You can add third-party repos if you want to
