Why isn't there a non-kyc Bitcoin donation option? I don't want to use a credit card that will remove a percentage of fee on my donation and will certainly not give my ID to donate to anything.

You could get a nostr account and enable zap for small donation + add a Bitcoin lightning donation option on your projects.
