What is this doing?
This is actually pretty wild and impressive.
If a vendor wants to accept Bitcoin payments but also needs to use fiat to pay their suppliers and bills, they can automatically convert their Bitcoin payments to stablecoins with BTCpay server's Sideshift plugin.
In this example, a portion of payments on my online store will automatically be converted to USDt and sent to my nostr:npub1jg552aulj07skd6e7y2hu0vl5g8nl5jvfw8jhn6jpjk0vjd0waksvl6n8n Green Wallet, another portion of sats will be sent to my Bitcoin node running at my house, and 10% will go to nostr:npub10pensatlcfwktnvjjw2dtem38n6rvw8g6fv73h84cuacxn4c28eqyfn34f to support open source software development.

It's super easy! You don't even need to run your own node if you don't want to. You can deploy BTCPay server via LunaNode and use Alby as your Lightning node.

And what sort of hardware would be required?
I have a couple of rpi's spare ( a 3b+ & 4b), would they be sufficient?
Try with with server like old hp minidesk or any other reliable hardware. Raspi works as well but if itβs to be more reliable I will run on bit robust haraare.
