For all those 'mericans that are in "panic mode" using Phoenix, here is what you should do:
1. Save you phoenix seed.
2. Uninstall from app store (because is linked to your account)
3. Install app from their github, without any fucking app store

4. Restore from seed.
Done, be happy and ignore all the shit.
If you still use an apple shit, drop it now and take an android, de-googled and do those steps.
If you still want to use your fancy apple crap... sorry but you have been warned.
PSA: in Android (including GrapheneOS, and most likely all other forks), any installed app can see all other installed apps, even if they were installed from different sources.
Every app/service on your phone will still be able to see that you have Phoenix installed if they care to look.
On GrapheneOS, you could install Phoenix in a different user profile by itself or with only other apps that you trust not to share info.
