Hot, and sear quickly (eat rare). I use worchestershire, garlic/pepper/salt. Let rest and when ready to slice, cut at an angle across the grain.

That's a good overall gauge.

Just keep a close eye on the cooking process -- prod and poke the steak to feel the transformation unfold as it cooks. This tactic helps develop an intuition when simply observing the meat (in my experience anyway).

Smell is also a fantastic indicator of when it's cooked to perfection!

High flame and check every 2 minutes, flip as needed.

Half an onion, lime juice, salt and pepper, 1/4 t cumin - blend and pour over steak. Let sit for a bit, grill over high heat, 4 min per side or so. Cut in thin slices across the grain.

I just cook it like any other steak. Always comes out great. Just be careful not to over cook obviously:)

Rub it with Thai red curry paste OR marinate in a mix of ketchup, red wine vinegar, garlic, and olive oil (save and boil the marinade)

The latter one is also very good smoked!
