Gelatin/pectin is a small fraction of the overall composition. They're something close to 80%-90% sugar. I was sourcing ingredients for using an industrial gummy machine, and shocked when I found out gummies don't have much "gum" at all.
I understand they don’t set up well without a lot of pectin. But, no I have not. Interesting idea.
