Subpar would mean below par, which would mean your good right? So overpar would be the right way to say that?

Par can be used either way. I think the use in golf is unique.

I think it's because by bending your knees more forward and learning overtop makes you pick up speed quickly. The expression comes from warning people when they get too far ahead of themselves. Like they're picking up lots of speed without truly being able to handle it.

Mostly I think it’s more like, don’t get too far out over your skiis? Like, don’t lockup the front brakes?
