Zaatar was an unlock for me - only learned it when I stayed in a friendly AirBNB.
Now labneh is on the list
At home I just mix Greek yogurt with flaked sea salt and then drizzle it with really good olive oil and a squeeze of lemon. It might not be as authentic as what you can find in a Middle Eastern grocery but it gets close.
