I'm techy but I'm slow. What's this.
It lets you add an apps GitHub link, then it takes care of downloading the apk and updating for you. Amazingly handy for fast moving apps like Amethyst!
Nice! I do that by hand for onyx.
Does it delete the old apk?
Do I have to turn on/leave on download from unknown sources? Because I usually turn that on and right back off after each apk.

Just get it from GitHub, it will update itself.
You can install it via the APK. It works on my pixel.
