I would recommend showing the rest./cafes/hotels surveys of the percentage of people that go somewhere to hear the live music. Or said a different way, you could show them the percentage increase in business at places you play comparing before they had live music with after.

You could even offer to play for free and then compensate you your rate once they see an increase in revenue.
