If I drink more than two glasses of wine here in the US I get hung over the next day. Went to Europe recently drink as much as I wanted never got hung over. What’s going on here? If you can solve this problem I will buy wine from you for the rest of my life.

would I make gives you the same experience as Europe. It's amazing the difference with conventional us wine and European wine. I and the Europeans make wine with less additives and just generally less touch by the wine maker.

My goal is to make wine by getting out of the way so that it can just be you and the grapes skin to skin

Thanks for posting. You are so correct. My beloved Italian father was a chemical engineer who loved wine. He sold it from his wine cellar at our farm in Portage Wisconsin. He became a sommelier of some importance, I have the picture of him receiving it. He died in 2008. May he rest in peace. He will as long as you're preaching the truth.

for me, 30 day elimination commitments are more about breaking the habit and proving to myself that I can do it.
