I just recognize good flavour combos when I taste them. Peanuts (savory) & acidity is a great combo, be it with vinegar or citrus. Think Thai peanut sauces. Lots of this in Asian & Filipino cuisine. This sandwich has history stretching back at least 100 years, so obviously it tastes good to a lot of people. Anyone I've introduced it to is always pleasantly surprised.
